Vegetable Curry

So I have to admit something…in the last year I have discovered curry dishes and I’m slightly obsessed. I never thought it was something I liked until I got adventurous at a restaurant one day and oh my gosh, how did I not discover this amazingness sooner?!?!

You can make curries all sorts of ways and did you know that curry can be categorized by its color? There’s red, yellow, and green curry dishes.

RED – perfect for just about everything and a good starting out point if you aren’t afraid of mild spiciness. It gets its color from red chillies.

YELLOW – used for poultry, seafood, and vegetarian dishes. It gets its color from yellow peppers and turmeric which makes it more mellow.

GREEN – made from green chillies with a spicy, hot flavor.

Why I like this recipe?

I really liked the tomato paste and basil added in. It gave the curry a whole different flavor I haven’t tried before and of course, I wanted to share it with you all.

side note – I had some zucchini in the fridge when I was making this recipe that was about to go bad so I shredded it up and added it to the mix, along with some diced chicken; perfection!
